C’est La Vie on Tap Now & Bottles Available Saturday

Brewed with our friend Chris Tidwell, of Panther Island Brewing Company in Fort Worth, Texas, this Super Grisette started with Ohio malt and a grist bill that utilized Texas hay and honey smoked with foraged Texas lavender, rosemary and thyme. We then added Chris’ own wild house culture, featuring spontaneous bacteria and yeast captured from the Texas air, to ferment it in oak, then age it for a year.

The result is a wild ale with smoky notes, light lemon, subtle herbaceousness, balanced acidity and a dry finish — and one of the most unique sours we’ve ever made.
